The makers mark on this ring is inside the circle reading Sterling Mexico 925 and seems to be MOC or MCC or HCC or HOC I think. there is also an eagle 3. Any help would be greatly appreciated. Thanks.

I see HCC, there is no mention of that mark in the book but that is fairly normal. It dates from 1955-1979.

MOC is mentioned in Billie Hougart's book as an artist from Iguala, Mex, which is a small town close to Taxco. The mark also says "Plata 925, Mexico, Iguala, Gro."(Gro is for the state of Guerrero). Artemio Navarrete was a master silversmith from Iguala who moved to Taxco to supervise Las Delicias for William Spratling. Other smiths were also from Iguala. I would date it much earlier to 1940's-1950's.

According to this site that eagle wasn't used till c.1955 so it can't be earlier than that.

The Eagle assay mark was introduced in 1948. (See Hougart's book, p. 10).

There are 2 eagle assays, one started in 1948, that is more detailed, and the outline one like shown in the pic that was used starting circa 1955.
