Determining Silver Content on Knive Handles?

I have a set of Wallace sterling flatware. Is there a rule of thumb or way to determine the silver content for pieces that are part sterling and part stainless, like knives and serving pieces?

It is probably fairly accurate to say that there is one ounce of silver in a knife handle.

I'm in agreement with salmoned on this.
I've been able to peel the foil thin silver off of some handles and found others to be made of 1/16th inch thick metal.
